Mrs Claus' Easy Gingerbread Biscuits

Ingredients

  • 320g self-raising flour
  • 3 heaped tsp ground ginger
  • 1/2 tsp ground mixed spice
  • 120g golden syrup
  • 55g butter
  • 30g soft brown sugar
  • 1 large free-range egg, beaten
  • 1 set icing sugar pens (for decoration)

MAKES APPROX 20 Biscuits

Yummy Gingerbread Men  
Directions
  1. Sift the flour, ginger and mixed spice together.
  2. On a Low heat, melt the golden syrup, butter and brown sugar in a saucepan until a smooth liquid.
  3. Allow to cool slightly and add to the flour mixture together with the egg.
  4. Mix well to form a dough and with a rolling pin roll into 3-4mm sheet. Cut into snowmen, christmas trees, or reindeer shapes depending on your available cutters.
  5. Place on a baking sheet making sure to leave some room for them to grow.
  6. Pre-heat your Oven to 180C, gas mark 4, fan assisited 160C
  7. Bake your Gingerbread Biscuit Shapes for 8-10 minutes, until golden.
  8. Leave to cool, then decorate with some coloured icing sugar pens.
